Prosciutto Borgo

A sophisticated Italian delicacy. Only the very best legs of pork are selected for Prosciutto. They are salted and seasoned to a traditional Italian recipe.The Prosciutto is then air-dried and matured over an extensive period. Sliced very thin, Prosciutto is mouth watering with fresh crusty bread and makes a great accompaniment to juicy rockmelon.

The word prosciutto derives from the Latin perexsuctum, which gave way to the modern Italian word prosciugare which means “to thoroughly dry”.

In Italian, “prosciutto” refers to the pork cut, not to its specific preparation. Italian patrons therefore make a distinction between prosciutto cotto (literally, “cooked ham”), which is what we often would call “ham”, and prosciutto crudo (“raw ham”), the dry-cured ham which we refer to as simply “prosciutto”.

Renowned and appreciated throughout the world, the history and traditions of Prosciutto date over 2,000 years. Prosciutto is one of the most popular Italian meats perfect for wrapping mozarella, veal and asparagus. It also adds a delicious flavour to creamy pasta sauces, stuffings and pizza.
