PRODUCT DESCRIPTIONS

Salame

Budapest Salame  This salame contains more beef than pork and is very finely cut and then filled into a large diameter synthetic casing. This salame is lightly smoked.

Cacciatori (Mild) They are a small salami, with course minced pork and beef meat. The meat mixture is filled into a natural casing and tied in chains of 6 units with "white" string.

Cacciatori (Hot) They are a small salami, with course minced pork and beef meat. The hot and spicy meat mixture is filled into a natural casing and tied in chains of 6 units with "red" string.

Cacciatori Mini (Mild & Hot)  They are mini cacciatori salami, with coarse minced pork and beef meat.  The meat mixture is filled into a natural casing and tied in chains of 6 units.  They are vailable in both mild, tied with white strings, and hot, tied with red string.

Calabrese  It contains a similar meat mixture to Peperoni but is spicier and filled into a slightly larger synthetic casing. Also suited for pizzas and party snacks.

Casalingo  As the name implies, this home-style salame, consisting of more pork than beef is medium to coarse minced, with just the right spices added and then filled into a natural casing.

Felino  This salame is based on a traditional salame which originates from the town of the same name, located not far from the city of Parma.  It contains 100% Australian pork and is mildly spiced, seasoned and aged for a minimum of 4 weeks.  The coarse meat mixture is filled into a natural casing and hand-tied.

Friulano This coarse minced salame contains more pork than beef. Its delicate mild flavour is typical Friulian.

Hungarian  This salame contains more beef than pork and is very finely cut and then filled into a synthetic casing. This salame is lightly smoked.

Italian  A medium to fine cut salame mildly spiced and seasoned the traditional Italian way. This salame also contains more pork than beef meat and is filled into a natural casing.

Lismore  The sweet flavour of this salame is just as enjoyable grilled on toast with cheese as it is by itself. The meat mixture containing more pork than beef is coarsely minced and filled into a natural casing.

Peperoni  This slim hot and spicy salame obtains its unique flavour from a blend of hot peppers and spices. This medium-fine meat mixture which consists of more beef than pork meat is filled into a synthetic casing. Ideally suited for pizzas and party snacks.

Pure Pork  This salame contains 100% pork and is mildly spiced and seasoned. The coarse meat mixture is filled into a natural casing and hand tied.

Pure Pork Aged   This salame contains 100% pork and is mildly spiced, seasoned and aged for a minimum of 6 weeks.  The coarse meat mixture is filled into a natural casing, hand-tied and vacuum packed.

Pure Pork Extra Hot  This salame contains 100% pork and is spiced for those who like their salame extra hot. This medium cut meat mixture is filled into a synthetic casing.

Pure Pork Sopressa Mild   This 100% pork meat Sopressa develops its unique flavour by being larger in diameter. The spices used are carefully chosen so as to enhance its distinctive mild flavour. This Sopressa is easily identified by it being hand tied lengthwise giving it a segmented look.

Pure Pork Sopressa Hot  It is identical to the Pure Pork Sopressa, but is hot and spicy and tied with red string.

Salame Al Prosciutto & Pistachio  This all pork meat salame is cut medium to fine with chunky pieces of pre-salted Proscuitto Meat as well as Pistachio Nuts mixed throughout. It also contains cracked black pepper and a selection of mild spices. The mixture is filled into a zig-zag cotton casing.

Sopressa Antica (Mild & Hot)  This 100% pork meat Sopressa develops its unique flavour by being larger in diameter. The spices used are carefully chosen so as to enhance its distinctive mild flavour. This Sopressa is easily identified by it being in a cotton casing with black stitching.

Sopressa Veneta  This larger diameter salame of coarsely minced pork and beef meat is filled into a natural casing. Being larger in diameter, it gives it a distinctive fuller flavour.

Veneto Mild  This salame is cut medium to fine and contains a higher percentage of pork than beef meat. It is spiced and seasoned the Venetian way, and filled into a natural casing.

Veneto Hot  This salame is coarsely minced and contains a higher percentage of pork than beef meat. It is hot and spicy, and filled into a natural casing.

Vesuvius   This salame is cut medium to fine and contains a higher percentage of pork than beef meat.  It is for those who like their salam hot and spicy.  It is filled into a cotton synthetic casing.

Zig Zag Casalingo  This home-style salame consisting of more pork than beef is medium to coarse minced, with mild spcies added.  It is then filled into a synthetic zig zag stitched casing.

Sausages

Chorizo's  These Spanish styled paprika sausages are delicately spiced, with just the right amount of garlic added. They are also smoked for extra flavour. Available in 2.5kg or 1kg packs.

Fresh Italian Style Sausages (Thick)  Our award winning pork and beef sausages are lightly seasoned with a delicate blend of selected spices to give you a traditional Italian Style sausage. They are also available linked, thick and vacuum packed for an extended shelf life.

Fresh Italian Style Sausages (Thin)  Our award winning pork and beef sausages are lightly seasoned with a delicate blend of selected spices to give you a traditional Italian Style sausage. They are also available linked and vacuum packed for an extended shelf life.

Fresh Italian Fennel  Our award winning pure pork fennel sausages are lightly seasoned with a delicate blend of selected spcies with just the right amount of fennel to give you a traditional Italian-style sausage.  They are available in 500g and 1kg packs.

Italian Salsiccia (Dried Italian Sausages)  These are traditional Italian style sausages conveniently placed in 1kg packs, these beef and pork sausages can be poached, fried, barbecued or cooked any way you like (but remember no need to cook these as long).

Delicacies

Coppa (Capocollo)  A traditional delicacy made from the neck of pork and renowned for its aroma. First it's rolled in salt and spices then air dried, and then matured to allow the flavour to develop. Also available in a half piece that's vacuum packed.

Cotechino   A favourite of the northern Italians. It consists of the rind of bacon pigs, selected meat from the head filled into a natural casing. It must be cooked for 2 to 3 hours in water before eaten. It is vacuum packed for lasting freshness.

Fillet Pancetta  Pork belly with loin of pork still attached, salted and spiced. It's then rolled and placed into a synthetic casing. This product is dried (not cooked) then allowed to mature. Slice thinly to fully enjoy the flavour. Also available in a half piece that's vacuum packed.

Flat Pancetta  Pork belly without loin of pork, salted and spiced. This product is dried (not cooked) then allowed to mature. Slice thinly to fully enjoy the flavour.

Lardo Salato (Salted Lard)  For those who want fresh salted lard.

Mortadella  An old sausage recipe invented by some Emilian Monks made by pounding pork and beef in a mortar, stuffing it into an animal bladder, then roasting it in the oven, where they used to bake their bread. We've vastly improved on the method of manufacture without compromising its authenticity. It is available in 500g, 1kg, 3.5kg and 7kg.

Prosciutto Borgo (Air Dried Ham)  Selected from the very best legs of bacon pork. The pork legs are de-boned, salted and seasoned according to a traditional Italian recipe. They are then air-dried and matured over an extensive period. Sliced very thin, it is mouth watering with fresh crusty bread as with rockmelon.

Prosciutto Crudo (Air Dried Ham)  We carefully select a part of the leg of pork, this uncooked product is also air dried and matured to a traditional Italian recipe. Its delicate flavour is appreciated when sliced very thin.

Ham

Oven Baked Ham (Prosciuttello)  The loin of pork prepared and cooked how we know best. Unsmoked so the full flavour of this choice cut of pork is fully appreciated. It is baked not steam cooked.

Prosciutto Cotto (L/Ham Italian Style)  If you like ham on the bone you will enjoy this even more, because we carefully remove the bone so you have a full slice of leg ham every time. This ham is also baked and not steamed cooked to give you the flavour of how ham should taste.

SLIDED PACKS

Prosciutto Borgo 100g & 500g (Air Dried Ham) Selected from the very best legs of bacon pork. The pork legs are de-boned, salted and seasoned according to a traditional Italian recipe. They are then air-dried and matured over an extensive period. Sliced very thin, it is mouth watering with fresh crusty bread as with rockmelon.

Preservative Free Free Range  This is as traditional and authentic as a home made salame. Made using 100% free range pork with no preservatives and it is mildly spiced and seasoned. The coarse meat mixture is air dried and cured in our special cloth casing and aged for a minimum of 6 weeks then vacuum packed to maintain it at its optimum flavour.

Pure Pork Aged   This salame contains 100% pork and is mildly spiced, seasoned and aged for a minimum of 6 weeks.  The coarse meat mixture is filled into a natural casing, hand-tied and vacuum packed.

Pizza Toppings

Diced Pizzaham  This is our flagship of high quality pizza toppings made using selected cuts of pork and used by the discerning pizzaola. It is diced to a consistent 3mm cube and packaged in a convenient 2kg modified atmosphere package.

Ground Beef  This is a high quality manufactured ground beef with distinct flavourings for the better quality pizzas.

Shredded Pizza Mix  This is a more economical pizza topping consisting of both pork and beef and shredded to convenient 30-40mm shreds. This is also packaged in a convenient 2kg modified atmosphere package.

Sliced Peperoni   A true spicy fermented salami not cooked or heat treated but a traditional medium heat peperoni, as only the Italians know how to do. It is sliced into convenient 2kg bags in modified atmosphere packaging. On request this product can also come in a shredded form.

Sliced Mild Salame   This is a mild salami made the same way as the sliced peperoni but without the chilli heat. It is sliced into convenient 2kg bags in modified atmosphere packaging. This product is also available in a shredded form.
